That is why we created the Natureville Plant-Based Cooking & Nutrition Academy—a hands-on plant-based cooking course combined with practical nutrition education.

Over six Sundays, you will learn the techniques behind delicious whole-food plant-based cooking, understand the nutritional principles behind the food, and build the confidence to create your own meals at home.

You won’t simply be taught a collection of recipes to copy.

You’ll learn the cooking techniques, ingredient principles and flavour-building skills that allow you to create hundreds of meals from simple whole plant foods.

6 Sundays of Technique-Based WFPB Cooking Modules 

Week 1.
WFPB Kitchen Foundations

Build the skills that make whole-food cooking fast, easy and delicious.

Learn essential kitchen equipment, efficient preparation, nutrient-conscious cooking methods and how to preserve colour, flavour and texture.

You’ll learn to cook whole grains, legumes and vegetables beautifully, build flavour from whole ingredients and create a kitchen that works for you—not against you.

You leave with: the foundational techniques to confidently cook without depending on recipes.

Week 2 

The Art of Oil-Free Cooking

Discover how extraordinary food can be created without oil.

Master oil-free tadka, sabzis, dals, roasting and crisping techniques—and learn how to create richness and satisfying texture using whole nuts, seeds and other plant ingredients.

We’ll even transform favourites such as samosas, pakodas and fries into delicious WFPB versions.

You leave with: the techniques to make the food you already love, differently.

Week 3

Plant-Based Protein, Dairy & Umami

Make plants do what you thought only dairy and animal products could do.

Learn to create plant-based milk, curd, cream and butter, explore egg alternatives and discover whole-food sources of plant protein.

Then go deeper into umami, creaminess, richness and texture—the secrets behind deeply satisfying plant-based food.

You leave with: the confidence to create your own plant-based alternatives instead of reaching for packaged substitutes.

Week 4 

Raw, Fresh & Fermented

Turn simple raw ingredients into food you genuinely crave.

Master the art of 2-minute dips, vibrant dressings, flavour-packed salads and creative raw combinations.

Explore fermentation techniques and learn how to build freshness, acidity, texture and flavour into your food—including irresistible raw desserts.

You leave with: a whole new appreciation for what fresh, living plant foods can become.

Week 5

Whole Grains, Millets & Gluten-Free Mastery

Make whole grains the star—not the side dish.

Learn the techniques behind perfectly cooked brown, black and red rice, millets, biryani and millet-based dishes.

Master dosa, idli and fermentation, plus soft gluten-free rotis, pulkas, Cafe Graze’s Signature lentil sour bread and pancakes.

You leave with: the skills to make wholesome grains and millets delicious, versatile and family-worthy.

Week 6 

The Art of WFPB Baking & Desserts

The Sunday that changes everything you thought healthy desserts could be.

Learn how to create egg-free, dairy-free, refined-sugar-free cakes and cookies, using whole ingredients such as dates, nuts and dry fruits.

Then take it further with traditional Indian sweets, creamy desserts and ice cream—without compromising the Natureville philosophy.

You leave with: the ability to create spectacular desserts from whole plant ingredients.

And underneath all six:

This isn’t a recipe-collecting course.

It is a technique-building course.

Once you understand the technique, you can take it home, change the ingredients, create your own dishes—and make the food your own.

Important Information

Before you apply for the January 2027 Natureville Whole Food Plant-Based Cooking & Nutrition Academy, please note:

6 Sundays. One complete learning experience.

The Academy runs every Sunday from 10:00 AM to 4:30 PM in Bengaluru. Participants should be able to attend all six Sundays in person.

Small cohort.
The Academy is limited to 15 participants. This allows for meaningful hands-on cooking, personal interaction and closer guidance during the sessions.

Application before enrolment.
This is an application-based Academy. After you submit the form, our team will contact you for a personal consultation call with Upasana, to understand your goals, answer your questions and discuss whether the Academy is the right fit for you.

Early Bird pricing.
The Early Bird investment is ₹70,000 and closes on 3 January 2027. The regular investment thereafter is ₹85,000. Both prices are inclusive of GST.

Optional health baseline.
Participants who wish to understand their current health and nutrition baseline may choose to do blood work before the Academy. Laboratory testing is optional and the cost is not included in the Academy fee. Reports should be submitted before the 3rd Sunday for the personal consultation with Upasana.

This is a hands-on cooking Academy.
You will be cooking, tasting, experimenting and participating throughout the sessions. Come prepared to get into the kitchen—not simply sit and watch demonstrations.

Dietary philosophy.
The Academy focuses on whole-food plant-based cooking, using minimally processed plant ingredients and avoiding oil, dairy, gluten, sugar and eggs, with the curriculum also covering refined-sugar-free and gluten-free techniques where relevant.

What you take home matters.
You will receive weekly take-home kits and the exclusive Natureville Academy Recipe & Nutrition Book to help you continue practising beyond the classroom.
